Picnic Wraps

How was your weekend? It's already Thursday but I'm still recovering from it to say the least. We are already 10 days into the month and I can only say this - i never want by ever changing life to change !!! I started a Masters Degree in Arts - Communication and Jounalism. It only felt fitting to my aim to achieve a PHd someday !!! So going back to college has been something together with juggling work and my ever flourshing and satisfying blog -- so cooking and eating have been the last few things on my mind. But every someday the WIFE in me needs to come up with something new to serve his appetite... 

I adapted these pretty purple wraps for simplicity, substituting a few ingredients here and there. Whether you're into beets or not, they're quite tasty! I placed the following mixture into whole wheat tortillas, topped with a large salad leaf, and rolled them up burrito style.

1 can of beets
1 10-ounce log of goat cheese
1 cup of cooked quinoa
1 handful of roasted pumpkin seeds
1 handful of dried cranberries
5 tablespoons of olive oil
Salt, pepper, cinnamon and chopped fresh basil to taste

I told Kunal they were secret wraps, so he'd be surprised by the bright purple bite.
